The Ingredients

1kg whole chambo fish
1½ teaspoons Salt
1 tablespoon Lemon Juice (optional)
Cooking Oil (Enough to allow shallow frying)

The Process

Step-by-Step
Rinse the cleaned fish under cold water and pat dry.
Using a knife, make shallow cuts along both sides of the fish
Sprinkle salt evenly over the fish, rubbing it gently into the cuts. Add lemon juice if using and let the fish rest briefly
Heat oil in a frying pan over medium-high heat until hot but not smoking (≈180°C)
Carefully place the fish into the oil, Fry until golden brown, turning once (4–5 minutes per side)
Remove the fish and place on paper towels to drain excess oil
